4 boneless skinless chicken breasts 1
 
2 sweet red peppers
 
2 zucchini
 
4 green onions
 
1/4 cup chicken stock 50 mL
 
1 tbsp soy sauce 15 mL
 
2 tsp cornstarch 10 mL
 
3 tbsp vegetable oil 45 mL
 
2 cloves garlic, minced
 
2 slices fresh gingerroot, chopped

Directions

Cut chicken and red peppers into 3/4 inch (2 cm) squares.
Cut zucchini into thin slices.
Slice onions, including some green parts, on the diagonal.
Combine stock, soy sauce and cornstarch; set aside.
In wok, heat oil over high heat; stir-fry garlic, ginger and chicken for about 2 minutes or until chicken is opaque.
Add peppers, zucchini and onions; stir-fry for 1 minute.
Pour in stock mixture; cook for 1 minute or until vegetables are glazed and tender crisp.
