Ingredients

 
2 raw chicken breasts
 
1 teaspoon salt
 
1 teaspoon sugar
 
3 tablespoons sherry
 
1 tablespoon soy sauce
 
3 tablespoons cornstarch
 
1 egg, beaten
 
1/2 cup oil
 
1 cup walnuts, blanched
 
2 teaspoons minced ginger
 
2 minced garlic cloves
 
1/2 cup boiling water
 
1 teaspoon Ac'cent
 
1 cup sliced bamboo shoots

Directions

Bone the chicken and cut in 1-inch cubes.
Combine in a bowl with the salt, sugar, sherry, and soy sauce.
Toss well and let stand 30 minutes.
Drain, reserving the marinade.
Dip chicken in the cornstarch and then in the egg.
Heat the oil in a deep skillet and brown the walnuts in it.
Remove walnuts and pour off all but 2 tablespoons oil.
Brown the chicken, ginger, and garlic; add the water, Ac'cent, bamboo shoots, and marinade.
Cover and cook over low heat 15 minutes.
Add the walnuts and cook 1 minute.
