Chicken With Tomatoes And Onions Recipe
Chicken with tomatoes and onions is an eternally fresh and flavorful recipe of chicken for me. Ingredients
| 2 broiler-fryer chickens | ||
| Olive oil | 3 Tablespoon | |
| Lemon juice | 1 | |
| Salt | 2 Teaspoon | |
| Butter | 1/2 Cup (16 tbs) | |
| Tomatoes | 1 Can (10oz), undrained | |
| Pepper | 1 Teaspoon | |
| Oregano | 1 Tablespoon | |
| Salt | To Taste | |
Directions
Rinse chickens well and pat dry with paper towels.
Rub inside and out with a mixture of olive oil, lemon juice, and 2 teaspoons salt.
Place in a large roasting pan.
Bake at 375°F 1 hour.
Melt butter in a saucepan.
Add tomatoes, pepper, and oregano.
Simmer 5 minutes.
Pour sauce over the chickens.
Turn oven heat to 325°F and bake chickens an additional 45 minutes; baste frequently.
Salt to taste.
