Chicken With Mandarins Recipe

Ingredients
1 5 pound roasting chicken
2 cups orange juice
2 tablespoons orange rind
1/3 cup brown sugar
2 tablespoons butter, melted
1 tablespoon flour
Orange or mandarin segments for garnish
Directions
Combine orange juice, orange rind, sugar, and melted butter.
Place chicken in glass baking dish.
Sprinkle body cavity withsalt and pepper.
Truss the chicken with string.
Place chicken, breast side down.
On microwave roasting rack in a 2-quart glass baking dish.
Pour juice mixture over the chicken.
Cook on highest setting for 18 minutes.
Baste every 15 minutes with pan juices.
Turn breast side up and cook on "roast" setting for 18 minutes.
Transfer chicken to a hot serving plate and cover with foil for 5 to 10 minutes before serving.
Mix flour with 2 tablespoons cold water and stir into pan drippings with a wire whisk.
Bring to a boil on highest setting and cook for 2 minutes or until the sauce has thickened.
Stir once after 1 minute.
