Ingredients

 
Chicken balls:
 
1 pound chicken meat, chopped fine
 
3 tablespoons chopped onion
 
6 water chestnuts, chopped fine
 
6 mushrooms, soaked and chopped
 
2 tablespoons cornstarch
 
1/2 teaspoon salt
 
2 tablespoons soy sauce
 
1 teaspoon sherry
 
2 egg whites, stiffly beaten
 
enough oil for deep frying
 
1/2 cup lichee syrup
 
1/2 cup chicken stock
 
1 stalk scallion cut into 1 inch sections
 
1 can lichees, drained
 
Thickening:
 
2 tablespoons soy sauce mixed with 2 tablespoons cornstarch

Directions

Mix all the ingredients for the chicken balls together and form into balls the size of a small walnut.
Heat a pan filled up to 1 inch of oil and when it is very hot add the chicken balls and fry till they are golden brown.
Remove and drain them on absorbent paper.
Reheat the pan with 1 tablespoon oil, the lychee syrup and chicken stock and the thickening mixture.
Stir for a few seconds, add the chicken balls, lichees and scallion.
Heat thoroughly and serve on a shallow platter immediately.
