| 4 large skinless and boneless chicken breast halves, cubed | ||

| 2 large tomatoes, cut in small chunks | ||
| Green peppers | 2 Large, finely chopped | |
| Stalk celery | 1 , finely chopped | |
| Parsley sprig | 4 , minced | |
| 1 large clove garlic, minced or put through press | ||
| Raisins | 1/3 Cup (16 tbs) | |
| Dry sherry | 1 Tablespoon | |
| Lemon juice | 1 1/2 Teaspoon | |
Directions
Brown spices over high heat in 2 tablespoons butter for 1 minute.
Add chicken, stir to coat and brown 1 more minute.
Set chicken aside.
Add remaining butter to pan; heat and saute onions over high heat until limp.
Add remaining vegetables, garlic, chicken, raisins, sherry and lemon juice and cook over medium heat until vegetables give off juices and celery is tender but slightly crisp.
Freeze in portions suitable for your family's needs.
