Chicken With Fruit And Honey Recipe
Ingredients

| Shallot | 1 , finely chopped | |
| 1 thinly sliced small apple | ||
| Butter | 2 Tablespoon | |
| Chicken | 1 | |
| Salt | To Taste | |
| Pepper | 1 | |
| Honey | 3 Tablespoon | |
| Lemon juice | 2 Tablespoon | |
| Cinnamon | 1/2 Teaspoon | |
| Ground cloves | 1/2 Teaspoon | |
| 2 oz pine kernels | ||
Directions
Wash the orange very thoroughly under plenty of cold running water.
Pat dry on kitchen paper.
Remove the zest (peel) with a small sharp knife or vegetable peeler, taking care not to bring away any of the bitter white pith.
Set the zest (peel) aside, cut the orange in half and squeeze.
Rinse the raisins (sultanas) under plenty of cold running water.
Pat dry on kitchen paper and put in a bowl, adding the orange juice and cognac.
Cover and microwave on HIGH for 3 minutes.
Put the shallot and apple into a casserole with the butter.
Cover and microwave on HIGH for 3 minutes.
Cut the chicken into 4 pieces, discarding the backbone and wing tips.
Remove the skin.
Season with salt and pepper.
Add the honey and lemon juice to the raisins (sultanas) and mix well.
Put the chicken pieces in the casserole and sprinkle with the cinnamon and cloves.

Cover and microwave on HIGH for 10 minutes.
Add the pine kernels.
Stir well.
