Chicken With Chestnuts Recipe
Ingredients
1 fryer (3 pounds)
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons soy sauce
2 tablespoons sherry
1 pound chestnuts
2 tablespoons oil
8 scallions, sliced thin
1 teaspoon minced ginger
1 cup chicken broth
Directions
Have the chicken completely disjointed and the breast cut in four.
Place in a bowl with the salt, pepper, soy sauce, and sherry.
Toss to coat chicken; let stand 30 minutes.
Cut a cross on the top of each chestnut.
Cover with water, bring to a boil and cook over medium heat 15 minutes.
Drain and shell.
Heat the oil in a deep skillet; brown the chicken in it.
Add the scallions, ginger, and broth.
Cover and cook over low heat 30 minutes.
Add the chestnuts and cook 15 minutes longer or until chicken is tender.
Watch carefully and add a little water if necessary.
