Chicken With Cellophane Noodles Recipe

Ingredients
| 2 whole chicken breasts | ||
| Chicken thighs | 4 | |
| Oil | 2 Tablespoon | |
| 2 green shallots, sliced | ||
| Fish sauce | 2 Tablespoon | |
| Light soy sauce | 1 Tablespoon | |
| Blackpepper | 1 To taste | |
| Water | 1/2 Cup (16 tbs) | |
| 125g cellophane noodles, soaked in hot water for 30 minutes | ||
Directions
Remove skin and bones from breasts and thighs of chicken and cut flesh into 2.5cm pieces. Heat a wok or frying pan, add the oil and swirl to coat the surface. Add the chicken pieces and shallots, and stir-fry for 2 to 3 minutes. Add the fish and soy sauces, a grinding of black pepper and the water. Bring to the boil and simmer for a few minutes. Add the drained noodles, return to the boil and cook for a further 3 minutes. Serves 4-6.
