2 1/2 - to 3-pound broiler-fryer chicken
 
2 tablespoons soy sauce
 
2 tablespoons honey
 
1 tablespoon vegetable oil
 
1 tablespoon chili sauce
 
1/2 teaspoon ground ginger
 
1/8 teaspoon cayenne pepper
 
1 can (16 ounces) apricot halves in juice, drained

Directions

Cut chicken into pieces; cut each breast half into halves and remove skin.
Place chicken in rectangular pan, 13x9x2 inches.
Mix remaining ingredients except apricots; brush over chicken, turning pieces to coat.
Cook uncovered in 375° oven, brushing with soy mixture occasionally, until thickest pieces are done, 50 to 60 minutes.
About 5 minutes before chicken is done, arrange apricots around chicken; brush chicken and apricots with soy mixture.
Cook until apricots are hot, about 5 minutes.
Spoon liquid from pan over chicken and apricots.
â–¡ Microwave Directions: Prepare chicken as directed.
Arrange with thickest parts to outside edges in microwavable dish, 12 x 71/2 x 2 inches.
Brush chicken with soy mixture, turning pieces to coat.
Cover tightly and microwave on high (100%) 10 minutes.
Brush with soy mixture; rotate dish 1/2 turn.
Cover and microwave until thickest pieces are done, 6 to 10 minutes longer.
Arrange apricots around chicken; brush chicken and apricots with soy mixture.
Microwave uncovered until apricots are hot, about 1 minute.
