Chicken Vegetable Stew & Rice (Palatable, Spicy & Nutritious West African Dish) Recipe

A palatable and spicey, nutrioutious West African Dish which combines spinach and the rich taste of delicious tomatoes in a wonderful stew with aromatic herbs that can be served with rice. If you like, you can even substitute the chicken for beef, shrimp or why not have all three? Don't worry, I didn't forget about those of you who are vegetarians. You can also just eat this dish with just the spinach and it is just as scrumptious!

Recipe Story

As a product of a Nigerian father and an American mother, I was fortunate to experience the best of both worlds. As a child until the tender age of 6, I attended school in Nigeria and I remember having many wonderful African dishes that my mom would prepare. One dish that stuck out in my Mom is the delectable chicken stew my mother would cook and whenever we feasted, our plates would be spotless. I remember the aroma that the spinach sauteed in the rich tomatoes sauce would produce and spices would fill the house with wonderful smells so intoxicating that a chef could create such an aroma only in his/her dreams. These are my memories and I would like to share the same wonderful, mouth-watering experience with all of you by sharing a piece of my heritage through this recipe. Enjoy!!! ;-)

Ingredients

 Chicken3 1⁄2 Pound (Can substitute equivalent Beef or Shrimp)
 Frozen chopped spinach20 Ounce
 Onions2 Medium
 Curry powder1 Teaspoon
 Paprika2 Teaspoon
 Ginger1 Teaspoon
 Thyme1 Teaspoon
 Garlic4 Clove (20 gm)
 Garlic powder1 Teaspoon
 Black pepper1 Teaspoon
 Cayenne pepper1⁄4 Teaspoon
 Tomatoes3 Medium
 Canned tomato paste12 Ounce
 Canned tomato sauce6 Ounce
 Olive oil1⁄8 Cup (2 tbs)
 Salt To Taste

Directions

Skin Chicken and cut into pieces. ***(You can cut chicken how like. You can also use chicken parts that are pre-cut)

Mince 3/4 of 1 of the onions together with the garlic cloves. Rub this mixture onto the chicken pieces along with thyme, curry powder, paprika, ginger, and black, pepper (cayenne-optional).

In large pot & covered for faster cooking time, let seasoned chicken cook for about 30 minutes on medium or until done (Cook about 15-20 minutes or so on each side; meat should be white). Use wooden spoon to turn over chicken so as not to tear chicken pieces.

Chop the leftover 1/4 onion piece. In another pot while seasoned chicken is cooking, boil chopped spinach together with chopped leftover onion (there should be 1 remaining) and let cook about 15 minutes. When done, drain spinach and put aside.

In a pan, heat 1/8 cup of olive or vegetable oil until hot. While oil heats chop remaining onion. When oil is hot add chopped onion to it and sauté for about 5 minutes.

When done add tomato paste, tomatoes a tomato sauce to sautéed onion mixture and let cook 5-7 minutes. Add this sauce mixture to the drained spinach and let cook 5 more minutes on medium.

Lastly, add this spinach mixture to the seasoned chicken. Thoroughly mix chicken and spinach together and let cook 30 more minutes or until done. ***(Add salt to taste if desired).

I just love this dish, I'm not African but I grew up in Michigan and my sister use to babysit for this African couple and I used to love when I would be over playing with their kids and they would cook this dish, most importantly they would let me stay over for dinner. I just got in touch with their daughter after 15yrs and I asked her for the recipe. long story short I couldn't follow her recipe and low and behold I found yours. very easy to follow and I'm making some now! it taste good already and it's not done but it brought back memories, THANKS!

Awesome. I'm glad it turned out okay. Well I was born in Nigeria. But was raised in Los Angeles. My Father is Nigeria and my mom is American (from Chicago) so up until the age of 7, i would travel between chicago and NIgeria (I would attend a british school in Nigeria but in would spend the summers in Chicago). Evently, my mom grew tired of the cold so at age 7, we moved to sunny California for good, i lost my british accennt soon afterwards (boo-hoo). Anyways, now i live in NY and am loving it. So we'll see where i end up later, maybe spain maybe Japan. but wherever it is, i'll be scooping out the best dished os coarse. Thanx for trying my dish! Stay tuned for more!
