Ingredients

3 lb (1.5 kg) chicken breast or chicken legs

1/2 cup (125 mL) soy sauce

1 tsp (5 mL) sesame oil

1/4 cup (60 mL) Sake or dry sherry

1 large garlic clove, chopped fine

1 tbsp (15 mL) dark brown sugar

1 tbsp (15 mL) freshly grated ginger root

Directions

Wash chicken, place it in plastic bag.
Mix the remaining ingredients and pour over the chicken.
(If you place the bag in a bowl, it is easy to pour in the liquid.) Tie the bag and stir all around so the chicken is coated with the marinade.
Refrigerate 2 to 8 hours.
To cook, remove chicken from bag, reserving the marinade.
Place the chicken in an oblong microwave-safe dish.
Cover the tip of the legs with little pieces of aluminum foil.
Microwave 15 minutes at HIGH.
Baste generously with the marinating liquid.
Microwave another 10 minutes at MEDIUM.
Let stand 5 minutes.
Serve with plain boiled rice.
Add the remaining marinade to the pan drippings.
Heat at HIGH 1 minute.
Serve as a sauce, to pour over the chicken and the rice.
