Here's a tried and tested easy recipe for homemade chicken stock. Try it... it's so much better than anything you can buy from the store. Make it and you have a tasty base for many of your dishes.

Ingredients
4 lbs chicken parts (wing tips, back bones, legs, thighs, cut into large chunks)
1 ½ tbsp Vegetable oil
1 ½ cups carrots (coarsely chopped)
1 cup celery (coarsely chopped)
1 ½ cups onion (coarsely chopped)
2-3 bay leaves
1 ½ tsp dried thyme
½ tsp whole pepper corns
2 tsp salt
Directions
Heat oil in a large pot, add vegetables. Saute for 3-5minutes. Take out and keep aside. Take half the chicken and sauté for 5 minutes and keep aside. Saute the remaining chicken too for 5 minutes and keep aside. Add the sautéed chicken and vegetables to the pot and stir. Reduce heat to medium low and cover and cook for 20 minutes. Open the lid and add salt, pepper corns, bay leaves, thyme and 2 quarts of water. Cover and put on medium high and simmer for 20 minutes. Strain into another pot. Cover and refrigerate for 8 hours. Use when needed.
