Ingredients

 Chicken1 Kilogram
 Grated coconut3/4 Cup (16 tbs), roasted
 Cinnamon1 inch, pounded
 1 pod garlic - minced
 Ginger2 1/2 Inch, minced
 Onions1 Cup (16 tbs), finley chopped
 Curry leaves1
 2 Tej patta (bay leaves)
 Tomatoes2 , finely chopped
 Oil4 Tablespoon
 Salt To Taste
 Finely Chopped Coriander Leaves to Garnish
 (all ingredients to be very lightly roasted on hot tawa, should not be burnt or blackish)
 Cinnamon1/2 inch (To Grind Dry Powder :)
 Green cardamom1 (To Grind Dry Powder :)
 4-5 pepper corns
 Poppy seeds1 Teaspoon (To Grind Dry Powder :)
 Jeera seeds1 Teaspoon (To Grind Dry Powder :)
 Cloves3 (To Grind Dry Powder :)
 6 Kashmiri Red Chillies
 5 Madras Red Chillies
 Turmeric powder1/2 Teaspoon (To Grind Dry Powder :)
 Coriander seeds1 Tablespoon (To Grind Dry Powder :)
 1/2 Tsp Methi Seeds

Directions

In a heavy bottom vessel heat oil add the pounded garam masala with tej patta and fry for a minute.

Add onions and curry leaves and fry for some time more till the onion starts turning brown.

Add ginger and garlic and fry till it turns golden brown.

Add grated coconut and fry for 3 minutes.

Add ground dry masala powder and fry for 5 minutes till it exudes a good aroma.

Add tomatoes and fry, add salt to taste.

Add chicken pieces and fry till the chicken pieces leave water. Check for salt.

Add half cup of water or less so that it just forms a thick gravy.

Cover and cook for 15minutes, stirring occasionally.

Garnish with coriander leaves and serve hot with Neer Dosa, Roti's or Rice
