1 lb boneless, skinless chicken breast
Marinade ingredients:
1 tsp brown sugar
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp turmeric
1 tsp ground black pepper
2 cloves chopped garlic
1 Tbs cannola oil
1 Tbs soy sauce
1 Tbs lemon juice
1 tsp fish sauce
unsweetened coconut milk for basting
Peanut sauce ingredients:
1 cup dry roasted peanuts
2 cloves chopped garlic
2 Tbs brown sugar
2 Tbs fish sauce
1/2 tsp sesame oil
1/2 tsp soy sauce
1/2 tsp red chili paste
lemon juice
Directions
Pound chicken breasts and slice into thin long strips. Place in a bowl
and add marinade ingredients. Toss to coat. Cover and refrigerate
for 2-24 hours.
Combine all peanut sauce ingredients in food processor or blender and process
until nearly smooth.
Thread chicken breast strips on wooden skewers (soak skewers in water for 30 mins prior
to threading with chicken to prevent burning) Baste chicken skewers with coconut milk.
Grill over high heat for about 2 mins per
side or until chicken is cooked through. Serve with peanut sauce.

The ingredient list above doesn't mention the 1/3 cup of water that is mentioned in the video. Without the water you just get peanut paste and I was a bit confused in the kitchen until I came back and watched this. But the rest was very good.

Great recipe, so glad to see you did NOT use peanut butter in this Southeast Asian recipe. That is a pet-peeve of mine when cooks use it instead of wonderful dry roasted peanuts, and they don't have peanut butter in SE Asia!
This is great party food too!
