Grilled Chicken Sandwich Recipe Video

A simple to make Picnic Chicken Sandwich recipe. Okay, so it's been a hot minute, but I finally have a new video for you guys!! As I've mentioned, I am pretty addicted to pesto right now, so I thought I'd share a recipe that would put some of my pesto to use!! This is a really simple sandwich to make. Other than grilling up the chicken, it's more of an assembly than it is a cooking recipe. And the reason it works so well for picnics, is because it tastes great at room temperature. Here's another thing I like to do with this sandwich; if I'm having a casual get together with my friends, instead of cooking up a bunch of food, I just make two or three different types of sandwiches, cut them up and let people help themselves. Add some hummus and veggies along with a few cocktails, and you've got yourself a party! Just out of curiousity, when you guys have pesto hanging around, what kind of meals do you make with it...(and don't tell me pasta and pesto, that's a given;)).

Ingredients

 
Chicken breasts – 2, boneless, skinless
 
Oregano – ½ teaspoon
 
Garlic powder - 1 teaspoon
 
Pesto - 6 tablespoon
 
Jarred roasted peppers - 6 ounces
 
Arugula - a couple of handfuls
 
Garlic -1 clove
 
Ciabatta rolls - 2
 
Extra virgin olive oil – a little
 
Salt and pepper - to taste

Directions

GETTING READY
1. Season chicken breasts with olive oil.
2. Add salt and freshly ground black pepper, garlic powder and a little oregano. Flip it over and repeat with the same seasoning on the other side.
3. Heat grill over medium high heat.
4. Spray it with olive oil and place the chicken breasts over it. Cook it for 4-5 minutes, flip it and do it on the other side as well. Keep it aside to cool and cut it breadth-wise into half.
5. Cut Cibatta roll into half. Drizzle with extra virgin olive oil and pop it into the griller for 5 minutes to get it toasty.
6. Rube each side with clove of garlic to infuse some flavor.
7. Spread pesto on each side of the toasted roll.
8. Arrange arugula over it.
9. Place chicken breasts over it.
10. Top it with roasted peppers.
11. Finish with another toasted roll.

SERVING
12. Serve Grilled chicken sandwich with tomato sauce.

To make it more tasty, here the chef is using a special homemade pesto and the way the sandwich is assembled too deserves special mention. It is full of nutrition, which are available from poultry meat and fresh greens.
