Recipe Story

Tina had been bugging me to make her some enchiladas so I finally did... She doesn't like corn tortillas so I used flour ones - and it turned out great! I now think I like them with flour over corn tortillas... I would have loved to use The Tortilla Guy's fab Tumaro's Tortillas but I couldn't find the white ones locally... They would have made this dish better...

Ingredients

 
1 pound of chicken (any bonless kind will do - I used chicken tenders)
 
.5 cup diced onion
 
3 cups salsa verde - make it or buy it
 
4 cups Mexican blend cheese
 
3-4 green onions sliced thin
 
2 cups sour cream
 
flour tortillas (or corn but there's more to do with corn)
 
cilantro

Directions

. brown the chicken
. add the diced onion and soften
. add 2 cups of salsa verde cover and simmer for 30 min
. shred the chicken with a fork
. build...
. flour tortilla
. cheese
. green onion
. chicken salsa verde mixture
. roll up like a cigar
. spray the bottom of a baking dish with pam
. cover bottom of baking dish with a bit of the salsa verde (.25 cup or less)
. place seam side down in baking dish
. cover with any remaining chicken salsa verde mixture
. cover with cheese
. cover with foil
. bake at 350 for 25 min
. uncover and bake for another 5-10 minutes
. make sour cream sauce
. 2 cups sour cream
. 1 cup of salsa verde (start with .5 cups and work up from there to the desired consistency)
. cover enchiladas with sour cream sauce
. sprinkle on some cilantro
. eat & enjoy
