Chicken Salad In Cantaloupe Boats Recipe
Ingredients
2 cantaloupes, chilled and halved
2 C cooked chicken, diced
1/2 C celery, diced
1/2 C toasted and slivered almonds
1 can mandarin oranges, drained
1/4 C mayonnaise
1/4 C sour cream
1/2 t. grated lemon peel
2 t. lemon juice
2 t. chopped preserved ginger
2 t. syrup from ginger
1/2 t sugar
1/4 t salt
Directions
Scoop out cantaloupes and make balls of meat, saving shells for boats.
Add to chicken, celery, almonds, and oranges.
Chill.
Combine and mix mayonnaise, lemon peel, lemon juice, preserved ginger, syrup, sugar, and salt.
Mix with fruit mixture and pile into boats.
Garnish with mint or parsley.
