Chicken Relleno Recipe

Ingredients
6 boneless skinless chicken breasts
1 (7 ounce) can whole green chiles
8 ounces Monterey Jack cheese
2 cups flour
2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon paprika
2 eggs, beaten
1/2 cup milk Vegetable oil for deep-frying
Directions
Rinse the chicken and pat dry.
Pound 1/4 inch thick between sheets of waxed paper.
Cut into the chiles, removing seeds and membranes.
Cut the Monterey Jack cheese into 6 (3x1/2x1/2 inch) strips.
Place a chile in the center of each chicken breast.
Place a strip of cheese over each chile.
Roll as for a jelly roll; secure with wooden picks.
Combine the flour, salt, pepper and paprika; mix well.
Combine the eggs and milk in a shallow bowl and beat well.
Dip each chicken roll in egg mixture, then flour mixture.
Repeat dipping for each chicken roll.
Deep fry at 400 degrees for 10 minutes or until golden brown.
Serve with taco sauce.
