Chicken Pilaf Recipe

Ingredients
4 chicken half breasts or fillets
2 onions
90g butter
1 cup long grain rice
1 red or green pepper thinly sliced
3 cups water
Chicken stock cube
Pinch each ground cloves, cinnamon
Salt and freshly ground pepper
Directions
Quarter chicken breasts, removing skin and bones if liked, and slice onions. In a heavy frying pan, fry chicken and onion in butter for a few minutes, until golden. Add rice and pepper and cook for a minute or two, stirring. Pour over stock. Add spices, season with salt and pepper and bring to boil. Cover and reduce heat, simmer gently until rice and chicken are tender, about 25 minutes. Serve with a green salad
