Chicken Pasta Salad Deluxe Recipe
Ingredients
1/2 pound small bowtie pasta (2 cups)
1 pound boneless chicken breast halves, skinned
Vegetable cooking spray
1 teaspoon vegetable oil
1/4 teaspoon paprika
1 cup water
3/4 pound fresh broccoli, cut into 1-inch pieces
1 cup unsweetened orange juice
1/4 cup plus 2 tablespoons cider vinegar
1 teaspoon ground ginger
1/2 teaspoon paprika
1/4 teaspoon pepper
4 medium oranges, peeled, sectioned, and seeded
1/4 cup sliced almonds, toasted
Directions
Cook pasta according to package directions, omitting salt.
Drain and set aside in a large mixing bowl.
Trim excess far from chicken, and cur chicken into 3 x 1/2 inch strips.
Coat a large skiIlet with cooking spray, add oil.
Place over medium hear until hot.
Add chicken, and saute 5 minutes or until chicken is tender.
Stir in 1/4 Teaspoon paprika during last minute of cooking time.
Add chicken to pasta, and set aside.
Wipe skillet dry with a paper towel.
Add water to skillet; bring to a boil.
Add broccoli.
Cover; reduce heat, and simmer 3 minutes or until broccoli is crisp-tender.
Drain well, and set aside to cool; chill.
Combine orange juice, vinegar, ginger, 1/2 teaspoon paprika, and pepper in a small bowl; stir until well blended.
Pour over reserved pasta and chicken; add orange sections, and toss lightly to coat.
Transfer to a 13x 9x 2 inch baking dish; cover and chill thoroughly.
Add broccoli and almonds just before serving, tossing well.
