Chicken On The Spit Recipe

Ingredients

 
1 x 3 lb chicken
 
2 teaspoons salt
 
Freshly ground pepper
 
2-4 oz butter or margarine, melted

Directions

Wash and dry chicken, sprinkle salt and pepper in cavity.
Truss chicken firmly and insert spit rod through centre of bird from neck to tail.
Make sure chicken is held firmly in place and will not work loose while cooking.
Cook over medium hot coals for approximately 1 1/4-1 3/4 hours or until tender.
When cooked, drumsticks should feel soft and move easily.
Baste chicken frequently with butter while cooking.
Cut chicken into 4 portions to serve.
