Recipe Story
I saw Chef John make this a while ago and I've been dying to give it a go. It's been 15 or so years since I had it last. I'm not sure why it's been so long because it's really good. I'm going to be making this more often now...

Ingredients
1 box of sliced mushrooms
Directions
salt and pepper the chicken breasts then dust them with flour
Heat a skillet and add some olive oil and a knob of butter
brown the chicken on both sides - you will be cooking it again so it does not have to be cooked through at this point
remove the chicken to a plate and tent with foil
cook the shallots in the oil for 3 minutes or until softened
add the mushrooms and cook for 3 minutes
Add the marsala and cook for 5 minutes
add the stock and bring to a boil
return the chicken to the pan
reduce the liquid to your desired consistency
mount a tbs of butter and serve (over pasta in this video)
eat and enjoy
