Ingredients

 
3 tbsp (50 mL) butter
 
3 French shallots, minced or
 
6 green onions, chopped fine
 
1/2 lb (500 g) fresh mushrooms, sliced
 
1 tsp (5 mL) tarragon Salt and pepper to taste
 
1/4 cup (60 mL) dry Madeira wine
 
6 to 8 chicken breasts, boned

Directions

Place the butter in a microwave-safe dish large enough to hold the chicken breasts in one layer and melt 1 minute at HIGH.
Add the shallots or green onions.
Microwave at MEDIUM 3 minutes, stir well.
Add the mushrooms and tarragon, stir well.
Micro wave at HIGH 2 minutes, stir.
Add salt and pepper to taste and the Madeira wine.
Microwave at HIGH 2 minutes.
Place each breast on a wooden board or between sheets of waxed paper.
Pound with a mallet to thin them out.
Roll each breast, tie with thread and place it in the hot sauce in the dish.
Microwave at MEDIUM-HIGH 15 minutes.
Test with a fork for doneness.
If necessary, microwave another 3 to 5 minutes.
Remove from oven.
Set on serving dish, keep warm.
Pour gravy remaining in dish over the chicken.
