Chicken Liver Salad Recipe

Ingredients
12 chicken livers
1 garlic clove
50 g/2 oz butter
2 teaspoons grated lemon zest
2 tablespoons chopped parsley
Salt and freshly ground black pepper
Various kinds of lettuce
Oil and lemon dressing
About 100 g/4 oz white seedless grapes
Directions
Halve the livers and peel and halve the garlic clove.
Heat the butter and add the garlic and lemon zest.
Put in the livers with half the parsley and seasoning.
Cook steadily for 5 to 6 minutes, or until just tender.
Meanwhile, arrange the lettuce in a dish and add a very little dressing.
Remove the garlic from the pan and tip the warm cooked livers on to the lettuce.
Top with the grapes and remaining parsley and serve at once.
To prepare ahead: Prepare the salad and get the ingredients ready for cooking the livers, but only cook them ahead if you can reheat them for a very short time in a microwave.
