Chicken Liver Omelette Recipe

Ingredients
2 tbsp (30 mL) margarine or butter
1/2 lb (250 g) fresh chicken liver, slivered
1 tsp (5 mL) flour
Salt and pepper to taste
2 tbsp (30 mL) sherry of your choice
3 green onions, chopped fine
1 3-egg omelette (see My Favorite 3-Egg Omelette)
Directions
Place the butter or margarine in a 9-inch (23 cm) microwave-safe pie plate.
Microwave 2 minutes at HIGH (the butter must sizzle).
Add the slivered chicken liver.
Stir well.
Sprinkle with the flour, salt and pepper to taste.
Microwave 2 minutes at MEDIUM.
Add the sherry and the green onions.
Microwave 2 minutes at MEDIUM.
Make the omelette.
Garnish with the hot chicken liver mixture.
Microwave 2 minutes at HIGH (the butter must sizzle).

Stir well.
