Chicken Liver Mousse Recipe
Ingredients
500 g chicken livers
3 shallots, chopped
30 g butter
1/4 cup brandy
1 tablespoon honey
1/4 cup cream
2 sprigs fresh thyme and marjoram
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
125 g melted butter
Directions
Clean the livers and saute together with the shallots.
Place them in the work bowl.
Pour the brandy and the honey into the saute pan and reduce to 3 tablespoons, pour into the work bowl.
Add the remaining ingredients and process until very fine in texture.
Place the mousse into a bowl or jar, cover with some plastic film and refrigerate overnight.
