Ingredients

 
2 chicken breasts
 
3 tablespoons soy sauce
 
1 tablespoon oil
 
1/2 cup minced mushrooms
 
1/4 cup minced scallions
 
2 chopped water chestnuts
 
1/4 teaspoon powdered ginger
 
Dash cinnamon
 
2 teaspoons sherry
 
Fat for deep frying

Directions

Discard the skin and bones of the chicken.
Pound chicken as thin as possible between 2 sheets of waxed paper.
Cut chicken into pieces 2 inches square.
Sprinkle 2 tablespoons soy sauce over the chicken and let stand 10 minutes.
Heat the oil in a skillet; saute the mushrooms, sirlions, and water chestnuts for 3 minutes.
Season with the ginger, cinnamon, sherry, and remaining soy sauce.
Cool.
Spread some of the mixture on one side of the chicken square.
Fold over and press edges together.
Cut 4-inch squares of parchment paper, waxed paper, or aluminum foil.
Place a piece of chicken in the center of each, and fold over the paper envelope fashion.
Chill for 2 hours.
Heat the fat to 370° and carefully drop a few packages at a time into it.
Fry 4 minutes.
Drain and serve in the papers.
