Chicken Harpin Recipe

I am in love with this Chicken Harpin recipe as it brings such rave comments everytime I make it. Best enjoyed as a Main Dish this recipe was taught to me by a dear friend who also happens to be a great chef. I prepare this Chicken Harpin with Chicken as the main ingredient. In my view, to call yourself a chef, you need to have a personal recipe of Chicken Harpin, just like I do.

Ingredients

 
1 whole chicken
 
1 9-oz. can pitted ripe olives
 
1 6-oz. can mushroom bits
 
1/4 c. butter
 
6 tbsp. flour
 
1 1/2 tsp. salt
 
1/4 tsp. pepper
 
Pinch of mace or curry powder
 
1 c heavy cream
 
5 thin slices buttered toasted bread, cut in triangles
 
Paprika

Directions

Simmer, covered, chicken in enough water to cover for 30 minutes.
Drain, reserving 3 cups broth.
Bone chicken and arrange meat in 12 x 8 x 2 inch baking dish.
Top with sliced olives and mushrooms.
In skillet, melt butter; add flour, salt, pepper and mace.
Gradually stir in reserved broth and cream; cook, stirring, until thickened.
Pour sauce over chicken; top with toast.
Sprinkle with paprika.
Bake at 325 degrees for 45 minutes.
