Chicken Fricassee Recipe

Ingredients

 
4 1/2 to 5-lb. stewing chicken, cut up
 
1/2 cup flour
 
1 tsp. salt
 
1/4 tsp. pepper
 
1/4 cup cooking oil
 
1/4 cup butter
 
1 cup water
 
1 tsp. rosemary
 
10 -oz. can mushrooms, sliced
 
1 1/2 tbsp. flour
 
Baking Powder Biscuits

Directions

Wash chicken and dry on paper towelling.
Roll in mixture of 1/4 cup flour, salt and pepper.
Heat oil and butter in heavy skillet (your electric frying pan will work perfectly for this recipe).
Brown chicken pieces on all sides.
Drain off fat and save.
Add water, rosemary and mushrooms to chicken.
Cover tightly and cook over low heat about 11/2 hours, or until chicken is tender.
Add more water if necessary.
Remove chicken to hot deep platter and keep warm.
Add enough water to pan to make 2 cups liquid.
Heat to boiling.
Combine 11/2 tbsp. flour with a little cold water and stir mixture gradually into boiling liquid.
Add 1 1/2 tbsp. of the fat left from browning the chicken.
Cook gently 2 minutes stirring and scraping up all browned bits from bottom of pan.
Taste and season if necessary.
Surround chicken with split baking powder biscuits.
Pour gravy over all.
