Ingredients
8 frankfurters sliced
1/4 inch thick
1 1/2 cups uncooked rice
2 tablespoons butter or margarine
2 cans (about 1 pound each) stewed tomatoes
1 1/2 cups water
1 1/2 teaspoons garlic salt
2 cups diced cooked chicken OR 2 cans (5 or 6 ounces each) boned chicken diced
1/4 cup diced green pepper
Directions
Saute frankfurters and rice in butter or margarine in a large frying pan, stirring often, until rice is golden.
Stir in tomatoes, water, and garlic salt; place chicken on top; cover.
Simmer, stirring once, 30 minutes, or until rice is tender and liquid is absorbed.
Spoon into serving bowl; sprinkle with green pepper.
