Chicken Dijon Recipe

Ingredients
1/3 cup dijon mustard
2 tablespoons honey
2 tablespoons lime juice
1 tablespoon water
3/4 teaspoon ground coriander (optional)
11/2 teaspoons grated lime peel
4 skinless, boned chicken breast filets (about 1 pound)
lettuce leaves
lime wedges
chopped fresh cilantro (optional)
Directions
1. Preheat oven to 350°F.
2. Whisk together mustard, honey, lime juice, water, coriander and lime peel.
3. Place chicken in shallow ovenproof casserole.
4. Set aside 1/4 cup mustard sauce, pour remaining sauce on chicken.
5. Cover and bake 20 minutes.
6. Uncover, spoon sauce from casserole on top and continue to bake, uncovered, for 10 minutes or until completely cooked.
7. Arrange chicken on lettuce leaves.
8. Add 2-4 tablespoons of remaining sauce from casserole to reserved sauce and heat through.
9. Pour sauce over chicken and serve with lime wedges.
10. Sprinkle with fresh chopped cilantro.
