Chicken Cutlets Recipe

Ingredients

 
2 tablespoons flour
 
2 cups chicken stock
 
3 egg yolks .
 
3 cups diced, cooked chicken
 
12 mushrooms, finely diced
 
Salt and pepper to taste
 
1 whole egg, beaten
 
Bread or cracker crumbs
 
1 cup or more of shortening for deep frying

Directions

Mix flour with 1/4 cup chicken stock in a large skillet.
Gradually add rest of heated stock.
Stir until thickened.
Add beaten egg yolks to sauce.
Add chicken, mushrooms, and seasonings.
Stir constantly while mixture cooks for 5 minutes.
Cool, then chill mixture several hours, so it becomes stiff.
Shape mixture into cutlets.
Dip each cut let into beaten egg, then into crumbs.
Chill battered mixture again.
Fry cutlets in deep fat until thoroughly browned; serve.
