Chicken Curry Casserole Recipe
Chicken curry casserole is a microwaved asparagus and chicken curry casserole preparation that is delicous and simple to prepare. Cooked with an asparagus base topped with chicken in a chicken curry mix with mayonnaise, pimientos and chicken seasoned with salt and pepper, the chicken curry casserole is topped with breadcrumbs and can be served with rice.
Ingredients
2 packages (10 ounces each) frozen cut asparagus
1 can (10 3/4 ounces) condensed cream of chicken soup
1/3 cup mayonnaise or salad dressing
1/3 cup milk
1 tablespoon chopped pimiento
1 1/4 teaspoons salt
1/2 teaspoon curry powder
1/8 teaspoon pepper
3 cups cut up cooked chicken
1/3 cup dry bread crumbs
Directions
Microwave frozen asparagus in packages on paper towel until almost tender, 7 to 8 minutes; drain.
Arrange in oblong baking dish, 12 x 7 1/2 x 2 inches.
Mix soup, mayonnaise, milk, pimiento, salt, curry powder and pepper; stir in chicken.
Spoon onto asparagus.
Sprinkle with bread crumbs.
Cover loosely and microwave until hot, 8 to 10 minutes.
