Rich Chicken Curry Recipe
Ingredients
| Butter/Margarine | 2 Tablespoon | |
| 1 medium size onion, chopped | ||
| 2 teaspoons each curry powder and sugar | ||
| Ground ginger | 1/2 Teaspoon | |
| 2 chicken or beef bouillon cubes dissolved in 1/2 cup hot water | ||
| Red apple | 1 Small, skinned | |
| 1 can condensed cream of chicken or mushroom soup | ||
| Lemon juice | 1 Teaspoon | |
| 2 to 3 cups cooked chicken, turkey, lamb, or beef, cut into bite size pieces, or 2 cans deveined medium size shrimp, rinsed and drained | ||
| Hot cooked rice | ||

Directions
Place butter in a 2 quart casserole.
Microwave, uncovered, on HIGH (100%) for 1 minute.
Stir in onion.
Microwave, uncovered, on HIGH (100%) for 3 mintues.
Stir in curry powder, sugar, and ginger.
Microwave, uncovered, on HIGH (100%) for 1 minute.
Add bouillon to onion mixture along with apple, soup, and lemon juice; blend well.
Cover with a lid or wax paper.
Microwave on HIGH (100%) for 3 minutes.
Stir in chicken.
Microwave, covered, on HIGH (100%) for 2 to 3 minutes or until heated through.
Spoon individual servings over rice.
At the table, pass your choice of condiments in individual bowls.
Makes 4 servings.
