Chicken Coriander Recipe
Ingredients
| Chicken breasts | 3 | |
| Butter/Margarine | 4 Tablespoon | |
| Onion | 1 Small, grated | |
| Ground coriander | 1 Tablespoon | |
| Salt | 1 1⁄2 Teaspoon | |
| Chili powder | 1⁄2 Teaspoon | |
| Lemon juice | 1 Tablespoon | |
| Pan gravy | 1 Cup (16 tbs) |
Directions
Halve chicken breasts; remove skin, if you wish; then cut meat in one piece from bones.
Melt butter or margarine in a shallow baking pan; stir in seasonings.
Roll chicken in mixture to coat well, then arrange in a single layer in same pan.
Bake in moderate oven (350°) 30 minutes; turn.
Continue baking, basting several times with buttery liquid in pan, 30 minutes longer, or until chicken is tender.
Serve with Pan Gravy (for recipe, turn to chapter on Gravies) .
