Chicken Chop Suey Recipe
Chicken Chop Suey is a recipe that is extremely easy to prepare. You can serve this to your family for a nice homely dinner and they will love it. The Chicken Chop Suey can be served with hot noodles.
Ingredients
4 dried mushrooms
5 oz canned bamboo shoots
1 onion
1 pepper
1 lb canned bean sprouts
3 cups cooked chicken
2 tablespoons peanut oil
1 1/4 cups chicken stock
1/2 teaspoon sugar
1 teaspoon soy sauce
Salt and pepper to taste
1 teaspoon cornstarch
1 tablespoon dry sherry
Directions
Soak the mushrooms in warm water for 20 minutes, rinse, squeeze dry and cut into thin slices, discarding the stalks.
Cut the bamboo shoot into thin strips.
Cut the onion into eighths.
Slice pepper thinly.
Drain the bean sprouts, rinse in cold running water and drain again.
Cut the chicken into 1/2 inch cubes.
Heat the oil in a saucepan and add the chicken and vegetables.
Cook, stirring, for 3-4 minutes.
Add the stock, sugar, soy sauce and seasonings, bring to the boil, stirring constantly, and simmer for 5 minutes.
Mix the cornflour (cornstarch) with sherry and add to the saucepan.
Bring to the boil, stirring constantly, and cook for a further 3 minutes.
