Chicken Cheese Tortilla Casserole Recipe
A great little casserole thats packed with flavor,the salsa and ro-tel in the dish sets it apart from other recipes
Ingredients
2 cans re-fried beans
1 jar of salsa (your favorite)
1 can of ro-tel
1 can of cream of mushroom soup
1 can of red enchilada sauce
soy bean oil or extra virgin olive oil
2 sundried tomato tortillas
3tbsp adobo seasoning
about 4 cups of crushed tortilla chips
shredded monterey jack cheese
about 5 slices of american cheese
2 chicken breasts cubed and fried in a skillet
Directions
mix together in a large bowl beans,ro-tel,salsa,and 1/2 can of red sauce and cream of mushroom
in a 8 or 9" round casserole dish cover the bottom with red sauce
place a tortilla shell on top of the sauce
cube the chicken
add the oil to a large skillet and heat on medium high
pre-heat oven to 350 degrees
season the chicken with adobo seasoning
place the cubes into the skillet and cook at medium high until done about 20 minutes
drain the oil and add the soup to the chicken in the skillet and coat
add about 1 to 2 cups of the bean filling on top of the tortilla in the casserole dish
add 2 cups of crushed tortillas to the top of the beans in the dish
add the secon tortilla shell on top of the crushed chips
add the chicken mixture to the top of the tortilla
add the 2 more cupes of crushed chips on top of the chicken
cover with shredded cheese
place the cheese slices on top of the shredded cheese
after the oven has been pre-heated
place the dish in the oven and bake for 20 minutes

shoot yeah steve send me some samples bro and i'll use em, thanks my friend.... this recipe is easy and quite tasty snigdha let me know how you like it and i'll post more. i've got a taco casserole recipe that i posted yesterday that is equally delicious. i've got a few other casseroles as well that'll blow your mind including a stuffed cabbage casserole and a reuben casserole.
