Chicken Caesar Sandwiches Recipe
Ingredients
1/2 Ib bacon 250 g
2 tomatoes, halved, seeded and diced
1 lb cooked chicken breasts, diced 500 g
4 cups coarsely chopped romaine lettuce 1 L
16 slices French bread
DRESSING
1 clove garlic, minced
2 tbsp red wine vinegar 25 ml
1 tbsp anchovy paste 15 ml
1 tbsp lemon juice 15 ml
1 tbsp Dijon mustard 15 ml
1/3 cup olive oil 75 ml
3 tbsp mayonnaise 50 ml
3 tbsp freshly grated 50 ml
Parmesan cheese
1 tsp Worcestershire sauce 5 ml
Pinch cayenne pepper
Salt and pepper
Directions
In skillet, cook bacon over medium heat for about 4 minutes or until crisp.
Drain on paper towel; break into 1/2 inch (1 cm) pieces.
Drain tomatoes well; combine with bacon and chicken.
Dressing: In large bowl, combine garlic, vinegar, anchovy paste, lemon juice and mustard.
Whisk in oil, then mayonnaise; stir in cheese, Worcestershire sauce, cayenne, and salt and pepper to taste.
Toss chicken mixture with dressing.
Marinate in refrigerator for at least 30 minutes or up to 4 hours.
Just before assembling sandwiches, add lettuce.
Sandwich between bread.
