Chicken Cacciatore (Polio Alla Cacciatore) Recipe
Ingredients
4 lb (2 kg) chicken pieces
flour seasoned with salt and pepper
1l2 cup (125 ml) oil
2 onions, minced
1 green pepper, chopped
1 clove garlic, crushed
4 cups canned tomatoes
1l2 cup (125 ml) tomato puree
3 tablespoons tomato paste
2 teaspoons salt
1l2 teaspoon black pepper
1 teaspoon thyme
1l2 teaspoon mixed spice
1l2 cup (125 ml) light red wine
Directions
Toss chicken pieces in the seasoned flour.
Brown in the hot oil.
Add onions, green pepper and garlic and cook for ten minutes.
Add tomatoes, tomato puree mixed with tomato paste, salt, pepper, thyme and mixed spice and cook.
Uncovered, for 15-20 minutes.
Add the wine, cover and cook for about 45 minutes or until chicken is tender.
Brown in the hot oil.
Add onions, green pepper and garlic and cook for ten minutes.
Add tomatoes, tomato puree mixed with tomato paste, salt, pepper, thyme and mixed spice and cook.
