Garlic Chicken Cacciatore Recipe

Ingredients

 
1 (3 pound) chicken
 
3 tablespoons vegetable oil
 
1 clove garlic
 
1/2 teaspoon salt
 
1/4 teaspoon pepper
 
1 teaspoon rosemary
 
6 anchovy fillets, chopped
 
1/3 cup wine vinegar
 
1 1/3 cups dry red wine
 
3 tablespoons tomato paste
 
1/2 cup chicken bouillon

Directions

Cut chicken into serving pieces.
Heat oil in large frypan; saute chicken and garlic 5 minutes.
Turn chicken often.
Remove garlic.
Add salt, pepper, rosemary, anchovies, vinegar, and wine.
Simmer, uncovered, until liquid is reduced by one-third.
Dissolve tomato paste in bouillon; pour over chicken.
Simmer, covered, 20 minutes or until chicken is done.
