Herbed Chicken Cacciatore Recipe
Chicken Cacciatore is a delicious chicken dish that I just cant seem to get enough of. My family loves this tasty chicken preparation and so I end up serving it quiet often. Cook the tasty Chicken Cacciatore using this recipe and I am sure you will start cooking it more often too!!!.
Ingredients
1 3 to 4 lb. fryer
4 tbsp. olive oil
1 sm. onion, minced
1 stalk celery, chopped
1 clove garlic, minced fine
1/4 tsp. black pepper
Pinch of allspice
1/2 tsp. minced rosemary
2 c. stewed tomatoes, strained
1 c. chopped mushrooms
4 tbsp. minced parsley
1/2 c. red wine
Salt to taste
1 c. hot water
Directions
Cut up chicken; dry thoroughly.
Heat olive oil in kettle with a heavy bottom.
Brown chicken; remove from oil and drain well.
In remaining oil, cook slowly onion, celery and garlic, pepper, allspice and rosemary.
Add tomatoes, mushrooms, parsley, and wine.
Season to taste with salt.
Add water.
Return chicken to kettle; cover tightly.
Cook slowly until chicken is tender.
Serve hot with small, whole boiled potatoes flecked with butter.
