Chicken Cacciatore Recipe

Ingredients
1/4 c. olive oil
1 2 1/2 to 3 lb. chicken, cut up
2 med. onions, cut in 1/4 in. slices
2 cloves garlic, minced
1 1 lb. can tomatoes
1 8 oz. can tomato sauce
1 tsp. Salt
1/4 tsp. pepper
1/2 tsp. celery seed
1 tsp. oregano
1 or 2 bay leaves
1/4 c. cooking sauterne
Directions
Heat olive oil in a large skillet; when oil is hot enough to sizzle a drop of water, add chicken and brown slowly, turning once.
Remove chicken from skillet.
Cook onions and garlic in oil until tender but not brown.
Combine remaining ingredients except wine.
Return browned chicken to the skillet and add sauce mixture.
Cover pan and simmer 45 minutes.
Do not let the sauce bubble hard.
Stir in the wine.
Cook, uncovered 20 minutes turning occasionally.
Chicken is ready when it is fork tender and the sauce looks like chili sauce.
Discard bay leaves and skim off fat.
Arrange chicken and sauce on warm platter.
Serve with spaghetti.
