Ingredients
2 good-sized chicken breasts, boneless, or
6 to 8 chicken legs
1/2 to 3/4 cup (125 -190 mL) onion, thinly sliced
1/4 cup (60 mL) butter or margarine
1/2 tsp (2 mL) thyme or tarragon
3 thin slices of lemon, unpeeled
1/3 cup (80 mL) heavy or light cream
Salt and pepper to taste
1 tbsp (15 mL) flour
Directions
Place the butter or margarine in a microwave-safe dish large enough to hold the chicken pieces one next to the other and melt 3 minutes at HIGH.
Add the onions, thyme or tarragon and lemon slices to the melted butter.
Stir well.
Microwave at HIGH 3 minutes, stirring once.
This will soften the onions.
Stir well and place the pieces of chicken over the onions.
Pour the cream over all.
Salt and pepper to taste.
