Directions

GETTING READY
1. In a plate, place the chicken breast and sprinkle with salt and pepper on both the sides.
2. In a plate, spread 1 tablespoon of flour and dredge the chicken in it to coat on both the side, shake off the excess.

MAKING
3. In a pan over, high heat, pour the olive oil and allow to heat.
4. Place the chicken in the pan and allow to cook for few minutes, or until light brown in colour on both the side.
5. Remove the chicken and keep warm.
6. In the same pan, saute the shallots for about 15 to 20 seconds.
7. Add in 1 tablespoon of flour, and stir to cook it for about 1 minute.
8. Pour in the apple cider and whisk to deglaze the pan and remove the brown bits.
9. Reduce the heat to low and add in cream and Dijon mustard, and whisk well.
10. Season with salt and pepper and whisk to mix.

SERVING
11. Place the chicken breast on the serving plate and spoon the cider sauce on top.
12. Sprinkle little chives on top and serve hot.
