2 thinly sliced organic or naturally raised chicken breasts
A/P Flour for dredging
1 tbs Maille Dijon mustard
2 ounces real apple cider, unfiltered
t tbs organic heavy cream
1 small shallot minced
1 small clove garlic minced (optional)
kosher salt and black pepper to taste
fresh herb garnish (thyme, chives or rosemary)
Directions
1. Heat heavy bottomed pan to medium high, add oil.
2. Season chicken with salt & pepper.
3. Dredge in flour then lay in pan away from yourself.
4. Cook chicken until nice and brown on each side, about 2 minutes per side, remove from heat, keep warm.
5. Add shallots to pan (more oil if needed) and saute for 1 minute, add flour and cook for one minute.
6. De-glaze with cider and use a whisk to break up any brown bits, add cream and mustard, stir through then adjust seasoning with salt & pepper to taste. If not thick enough, reduce a little longer. If too thick, add more cider.
