Chicken Biryani Recipe Video

Ingredients
2 number black cardamom
800 grams chicken medium pieces
2 tbsp chopped coriander leaves
2 stick cinnamon
2 number cloves and green cardamoms each
1/2 tsp cumin and coriander pdr
2 tbsp each of chopped ginger and garlic
2 cup flavored rice(basmati)
2 number green chilli
1 tbsp javeri mace
1 tbsp lime juice
4 number medium sized onions sliced
2 tbsp oil or (ghee)
2 large onion fried
6 piece pepper corns
1/2 tsp saffron color
to taste salt
to taste turmeric
2 cup yoghurt
Directions
Grind the ingredients to be ground to a fine paste. Mix this paste with yoghurt and salt. Make cuts on the chicken pieces and rub this marinade into them well. Marinate in the refrigerator for at least four hours.
1. In a large vessel combine the rice, water, salt and cook till the rice is half-done. Drain the excess liquid and spread the rice on a plate to cool.
2. Heat the oil in a heavy-bottomed pan till hot and fry the sliced onions till they are crisp and golden brown.
3. Add the marinated chicken pieces, mix well with all other ingredients and add fried onion
4. In a large heavy-bottomed pan add chicken with marinade and top , a layer of rice topped with a portion of the saffron milk. In this way arrange alternate layers of melted clarified butter (ghee)/ butter, chicken, rice and saffron milk till they are all used up. Make sure the topmost layer is of rice topped with melted clarified butter (ghee) / butter and saffron milk.
5. cook on high heat for first 10 min and next 10 min medium heat and next 10 in low heat
6. cover it with a tight fitting lid. Cook on very low level
7. Garnish with slices of boiled eggs, nuts or raisins.

I am going to cook this for my boyfriend tomorrow and I have a few questions. First of all, I am a little confused from the listed ingredients to the ingredients on the video. There is no mention of mint leaves on the written part. Also in the how to make section, there is a mention of saffron milk, however in the video and in the lists of ingredients there is no mention of milk. And one more very important question, the video does not show a layer of the chicken with the rice, it just shows that you put the marinated chicken on the bottom of the pot and then the rice in above that. Is there or is there not a layer that needs to go on?? Please help i want this to turn out.

I hope I could help you with your unanswered questions and I am answering this very late as Iam in this site very recently.
1. How to make saffron milk - mix saffron in a little amount of warm milk.
2. There is no layer as such. Just spread rice on top of the marinated chicken.

Seems like I can help you out with the very first question you have - Mint leaves are usually used for flavor and so, the same can be taken as optional. That is usually put as a garnish, which is after the dish is cooked. Adding mint leaves does make the biryani flavorful, but if you don add mint leaves also, that doesn much affect the taste of the rice. If you use coriander that should be enough! :)

i've never cooked biryani like this...you make it seem so easy..i like the idea of cooking the rice an the chicken together...and marinating the chicken with everything in it.....shall definitely try it out soon.
