Directions

GETTING READY
1. To marinate the chicken, take the chicken pieces in a big bowl, add green chilies, mint, ginger garlic paste, coriander leaves peppercorns, black cumin, chili powder, turmeric powder, salt, cumin powder, coriander powder, bay leave, mace, cinnamon, cloves, green cardamom, black cardamom, fried onion, oil, yogurt and mix all the ingredients well.
2. Soak the rice for 30 minutes. Drain the water and keep aside.
MAKING
3. In a pan, take some water and bring it to a boil. Add oil and salt and simmer for 2 minutes. Now add the pre-soaked rice to the boiling water. Add whole cardamom for flavor.
4. Let the water come to boil and cook the rice till half done. Remove the pan from the heat, strain the water, and keep the half-cooked rice aside.
5. Take a deep dish, pour the marinated chicken, and level it up. Now take the half-cooked rice and sprinkle it on the top. Nicely spread the rice and layer it evenly.
6. Add coriander leaves, mint, fried onion, and saffron water on top. Cover the dish with a tight lid. Allow it to cook for 30 minutes on medium heat. Once it starts emanating nice aroma, increase the flame and cook it in a high heat for 5 minutes and the allow it to cook in low heat for another 15 minutes.
SERVING
7. Garnish with mint leaves and serve hot.

I am going to cook this for my boyfriend tomorrow and I have a few questions. First of all, I am a little confused from the listed ingredients to the ingredients on the video. There is no mention of mint leaves on the written part. Also in the how to make section, there is a mention of saffron milk, however in the video and in the lists of ingredients there is no mention of milk. And one more very important question, the video does not show a layer of the chicken with the rice, it just shows that you put the marinated chicken on the bottom of the pot and then the rice in above that. Is there or is there not a layer that needs to go on?? Please help i want this to turn out. Thx

I hope I could help you with your unanswered questions and I am answering this very late as Iam in this site very recently. 1. How to make saffron milk - mix saffron in a little amount of warm milk. 2. There is no layer as such. Just spread rice on top of the marinated chicken. Goodluck.

Seems like I can help you out with the very first question you have - Mint leaves are usually used for flavor and so, the same can be taken as optional. That is usually put as a garnish, which is after the dish is cooked. Adding mint leaves does make the biryani flavorful, but if you don add mint leaves also, that doesn much affect the taste of the rice. If you use coriander that should be enough! :)
