Ingredients

 
- Chicken Breasts (x4)
 
- x2 Onions
 
- x1 Tin Chopped Tomatoes
 
- Garlic (x2 cloves)
 
- Olive Oil (to fry)
 
- Garam Masala (x1 tsp)
 
- Chilli Powder (x1 tsp)
 
- Cumin (x2 tsp)
 
- Cardamom Pods (x4)
 
- Salt
 
- Rice (to serve)

Directions

Peel and chop the onions and garlic then put to one side. Heat some oil in a pan then add the cumin and cardamom pods and stir for 2 minutes. Now add the onions and garlic to the pan and stir for a further 5 minutes.

Halve the chicken breasts and add to the pan, stirring for a further 5 minutes. Then, add the chopped tomatoes, chilli powder, garam masala and a pinch of salt then stir together.

Bring the pan to the boil and simmer for 15 minutes (covered).

Now stir the mixture and simmer for a further 10 minutes (covered).

Be sure to prepare your rice whilst the curry is simmering then its ready to serve.
