Ingredients
1 lb chicken meat
2 scallions
2 tablespoons soy sauce
1 tablespoon sherry
Pinch of salt
1 tablespoon cornstarch
2 tablespoons water
2 tablespoons oil
1/4 cup oyster sauce
Directions
Cut the chicken into neat pieces as near to ball shapes as possible.
Chop the spring onions (scallions) finely, and then mix with the soy sauce, sherry and salt.
Mix the cornflour (cornstarch) to a smooth paste with water, add the spring onion mixture and mix into the chicken.
Mix well.
Heat the oil and fry the chicken over fierce heat for 1 minute, stirring all the time.
Add the oyster sauce, mix well, and fry gently for about 5 minutes.
