Chicken Appetizers With Cheese Recipe

| Chicken breast | 2 | |
| Soy sauce | 4 Tablespoon | |
| Sherry/Mirin | 2 Tablespoon | |
| Lemon slices | 2 | |
| Jack cheese | 1⁄2 Pound, grated | |
| Egg yolks | 1 | |
| Mirin | 1 Tablespoon | |
| Shredded lettuce | 2 |
Directions
Wash and dry the chicken breasts.
Do not skin.
Marinate the breasts in a combination of the marinating ingredients: soy sauce, mirin or sherry and the lemon, for at least one hour or longer.
Drain.
Place the chicken breasts on a lightly oiled baking sheet and bake at 350 degrees for about 30 minutes or until the chicken is golden brown.
Meanwhile, in a separate bowl, combine the cheese, egg yolk and mirin, blending well.
Spread the mixture over the cooked chicken breasts and bake about five to ten minutes longer.
Cut the chicken into about 1/4-inch slices and serve hot over a bed of shredded lettuce.
