Chicken And Spinach In Coconut Milk Recipe

Ingredients

 
1 fryer (2 1/2 pounds)
 
2 tablespoons oil
 
2 teaspoons salt
 
1 1/4cups coconut milk
 
3 tablespoons butter

Directions

Cut the chicken off the bones and into cubes.
Heat the oil in a skillet, brown the chicken in it.
Add 1 1/2 tea spoons salt and 1/4 cup coconut milk.
Cover and cook over low heat 20 minutes.
While the chicken is cooking, melt the butter in a saucepan, add the spinach and remaining salt.
Cover and cook over low heat 15 minutes.
Add the chicken with the remaining coconut milk; bring to a boil and serve.
